Eating Well: Grilled Chicken with Chimichurri Sauce

The dog days of summer.. no one wants to be outside grilling, but a fresh healthy dinner is so necessary during this busy time of year! Cooking is such a creative endeavor – from the flavors you want to create, the ingredients you choose, and the endless options for plating. Not to mention the reward of enjoying a delicious meal at the end of the creative project! So, I’m happy to share this “Grilled” Chicken with Chimichurri Sauce. [Emphasis on the quotations around the “Grilled”… I don’t want either of us to be outside in 100 degree weather after a long day of work. So, using a creative shortcut, grill pan on the stove top it is!]

The key is to make sure there’s a good bit of oil in the pan before you get started, and to have the heat on medium high to high. When you initially lay the chicken down, be sure not to move it for at least two minutes or so. Just let it sit and resist the temptation to flip it too soon, or move it around. That way, you can ensure you get a nice grill mark. After the grill marks are there, you can flip it over and lower the heat to medium until it’s cooked through. You might not have the great charcoal smokey flavor, but at least aesthetically it looks like you put the time into grilling! Bonus, the delicious fresh herbs and spices pack a nutritional punch and really dress up this lean, protein filled main dish!

Grilled Chicken with Chimichurri Sauce

INGREDIENTS:

-1 pound chicken breast, flattened (about 4 breasts)
-1 cup fresh parsley
-1/4 cup fresh cilantro
-1/2 cup olive oil
-1/3 cup red wine vinegar
-2 garlic cloves, peeled
-1 teaspoon crushed red pepper
-1 teaspoon cumin
-1 teaspoon garlic powder
-1/2 teaspoon salt
-1/2 teaspoon pepper

Directions:

1 – Over medium high heat, lay the flattened chicken breast onto a well oiled grill pan. Let them sear over the high heat for at least 2 minutes to ensure good grill marks on the chicken. After they’ve reached a light golden brown, flip them over and let them finish cooking through over medium heat, for about 8-10 minutes.

2- Meanwhile, while chicken finishes cooking and is resting, prepare the Chimichurri Sauce. Place all ingredients above (except chicken, of course!) into a food processor. Pulse until a nice sauce is formed. If it’s too thick, add a little more olive oil and vinegar until it reaches the consistency you’d like.

3- Serve the sauce either over the chicken, or on the side in a sauce dish. Enjoy!
